OPTITHIOLS
We have been using OptiThiols on our rose to protect juices from oxidation and increase the production of thiols. It is a very reliable product and has become an essential step for our rose production. We saw an impressive impact on aromatic expression and an improvement in the quality of our wine. Excellence B-Nature is an integral part of our Winemaking at Fallbrook Winery. No need for pre-fermentive soak to be cold, less SO2 at crush, a far better FSO2 to TSO2 ratio and less fermentation sulphides to deal with. We use Excellence B-Nature in our red and rose winemaking and love the control it offers over our juices. On compromised red fruits during cold soak, Excellence B-Nature does a great job at preventing spoilage yeasts from kicking off fermentation. For our rose program, we use Excellence B-Nature to protect the saignee portion from wild fermentation while we consolidating juice for few days. SOFTAN VINIFICATION
I used Softan Vinification on all my reds during fermentation. After over 35 vintages of experience and many trials with various tannins, Softan Vinification is an exceptional tannin and the best on the market, for all grapes varieties. NATURSOFT
We use NaturSoft on 2 lots of Marsanne with very satisfying results and just what we were expecting. In the first lot, we used NaturSoft to build up mid-palate, body and length, the resulting wine maintain a great acidity and has a nice weighty palate. Polymix Natur
I racked my first white and rose juices this morning that were fined with Polymix Natur’. The results are beyond my expectations.
