L.A. Bayanus
Saccharomyces bayanus, resists to difficult conditions, high alcohol, low pH, high pressure. Used for fermentation restart or as prevention to struck fermentation for an inoculation under 8brix. The speed at which it implants and starts the fermentation, as well as its resistance to high alcohol contents make L.A. Bayanus a specialised yeast for restarting stuck fermentations, even under difficult conditions.
It also consumes SO2 during the fermentation.
This product is allowed for a use in Organic and NOP according to the current regulations.
Dosage: 20 g/hL (1.7 lb/1000 gal), 30 g/hL to restart fermentation
Applications: restart fermentation, secondary fermentation, to help finish the fermentation in difficult conditions.
Alcohol tolerance: 16%
